3. The purpose of UHT is to kill all microorganisms (including propagules, pathogens, non pathogens and spores).Generally, the sterilization time is 4-10 seconds and the sterilization temperature is 135-140 ℃. In the first stage, the milk was preheated to 80 ~ 85 ℃, which was helpful to the thermal stability of whey protein. The second stage is to heat the milk above the boiling point to 135 ~ 150 ℃ and completely kill all microorganisms.
